Two thousand years ago, Pliny the Elder established a division between the ''Vasconum saltus ''and the ''Vasconum ager'', the former damp and wooded, and the second sown with cereals and vineyards, which tally with the damp and dry zones of the Basque Country, respectively. The volume on livestock farming and shepherding mainly focused on the land on the damper side of the watershed, while this one is on the drier and arable farming area. However, it should always be remembered that both livestock and arable farming were to be found throughout the rural Basque Country in the traditional society and, to a great extent, in the primary sector that still survives today.

La agricultura que se describe en este tomo del Atlas Etnográfico de Vasconia constituye un repaso de lo acontecido fundamentalmente a lo largo del siglo XX. Sin embargo, como podrá comprobarse por los distintos capítulos que constituyen esta obra, se concede una clara preferencia a las prácticas que se conocieron antes de la intensa mecanización que tuvo lugar a partir de los años 1960. Eso no obsta para que también se haya recopilado información sobre la agricultura moderna que se practica sobre todo en la vertiente mediterránea del territorio, la más claramente agrícola y donde esta actividad ha experimentado una transformación más pareja a la desarrollada en otras áreas agrícolas no solo del Estado español sino también de la Unión Europea.
